What to Look for When Buying Used Display & Holding Equipment

On heated equipment, verify every element and lamp heats and thermostats respond — elements are usually cheap, but dead controls on older digital units can be uneconomic to fix. On display cases, inspect glass for chips and delamination, check that curved glass (expensive to replace) is intact, and confirm interior lighting works since it sells the product. For steam tables, check wells for pitting and confirm whether the unit is sealed-well or open, gas or electric. Humidity-controlled holding cabinets should hold both temperature and moisture set points through a full cycle.
